Coarsely chop the onion and garlic ● Melt the butter with oil in a large saucepan, not over a very high heat ● Add the onion and garlic into the saucepan and fry it slowly ● The mixture in the saucepan should turn slightly golden, but not get burnt
Pour over with broth, add salt to taste ● Add fresh herbs ● Do not chop the herbs, tie the whole stems up in a posy ● Finally, add bay leaf and cook for about 15 minutes
Remove the herbs and bay leaf ● Leave the soup to cool and mix until smooth ● Season with pepper to taste and add cream for a smoother consistency
